The high cost of food is on just about everyone's mind. One way I trim my grocery budget is to use less-expensive cuts of meat.

Instead of thick pork chops, I'll turn to a pork shoulder...

Grilled Steak with Sweet & Sour Onions

Beef Recipes

3 lg. onions, cut into 1/4 inch thick slices
2 tbsp. honey
1/2 tsp. dry mustard
1/2 tsp. salt
1/2 tsp. paprika
1/2 tsp. pepper

4 T-bone or Porterhouse steaks, cut 1 inch thick

Arrange
sliced onions on a large square of heavy duty foil. In small bowl,
combine honey and mustard; drizzle over onions. Sprinkle with salt,
paprika, and pepper. Fold foil loosely around onions and seal edges
tightly. Grill packet on covered grill over medium heat 20 minutes or until onions are tender; turn once. About 5 minutes after onions start to grill, place steaks on grill with onion packet. Grill 8 to 10 minutes on each side for medium rare. Serve onions on top of each steak.

BBQ Mini Meat Loaves

 BBQ mini meat loaves2 lbs. ground beef
2 slightly beaten eggs
2 c. soft bread crumbs
1/4 c. finely chopped onions
1 tbsp. horseradish
1 1/2 tsp. salt
1/2 tsp. dry mustard
1/4 c. milk
1/2 c. butter
1/2 c. ketchup

Combine first 8 ingredients and mix well. Shape into
6 miniature meat loaves about 4 1/2 x 2 1/2 inches. Heat butter with ketchup until butter melts. Brush over all sides of loaves.

Cook meat loaves over medium coals; turn and brush all sides frequently with sauce. Cook for 40 minutes or until done. Pass remaining sauce.

Serves 6.

Country Beef Ribs

COUNTRY BEEF RIBS country beef ribs

1 (5 lb.) slab beef back ribs
1/3 c. soy sauce
1 tbsp. cider vinegar
3/4 tsp. ground ginger
1 tbsp. honey
1 bunch green onions

Cut slab into individual ribs. Arrange in 13x9 inch glass baking dish.

Combine soy sauce, vinegar and ginger for marinade. Pour over ribs. Cover tightly and refrigerate several hours or overnight, turning at least once.

Heat coals in grill to medium hot. Place grill rack 4 inches above coals. Remove beef from marinade; reserve marinade. Grill ribs 20 minutes on each side.

Stir honey into reserved marinade. Brush over both sides of ribs. Grill 10 minutes longer on each side.

Trim green onions; brush with marinade and grill 5 minutes, turning once. Serve ribs garnished with green onions.

"So Easy" BBQ Beef Brisket

 1 whole beef brisket (9 to 10 lb.) trimmed

MOP SAUCE:
5 slices bacon, minced
1 c. minced onions
1 1/2 c. beef broth
1/4 c. vegetable oil
1/2 lemon, quartered
2 tbsp. chopped fresh thyme or 1 tsp. dried
1/2 tsp. salt
1/2 tsp. freshly ground pepper

DRY RUB:
2 tbsp. seasoned salt
1 tbsp. cracked black peppercorns
1 tbsp. cracked white peppercorns (substitute ground white pepper if needed)
1 tbsp. garlic powder
1 tbsp. onion powder
1 tbsp. paprika
